Pork Pernil, Oven Roasted Potatoes and Steamed Vegetables



This recipe will take a little over an hour and unless your family has huge appetites, you will likely have some nice pork left overs!

Pork Pernil Ingredients:

Half Pork Loin (about 2.5 pounds)

2 tablespoons lemon juice

1 tablespoon olive oil

1 tablespoon salt

1 and 1/2 teaspoons oregano

3 cloves of garlic

Pepper


Potatoes:

2 tablespoon olive oil

4 medium potatoes diced

Garlic Powder

Sea Salt

Pepper

Vegetables for Steaming:

Feel free to pick anything you’d like, some of my favorites include; Broccoli, Cauliflower, Green Beans, Carrots, Brussel Sprouts, Asparagus.

1. Preheat oven to 400.

2. While oven is preheating, dice your potatoes.

3. Toss potatoes in oil and coat generously with garlic powder and sea salt. Add pepper to taste.

4. Place potatoes on a lightly oiled baking sheet and place in oven for 45 to 60 minutes. Many recipes call for less time, but I think the purpose of oven roasting is to get them nice and crispy. And I believe that takes salt and time. Turn potatoes half way through.


5. Once potatoes are in the oven, mix lemon juice, olive oil, salt, oregano, garlic and pepper into a paste in a small bowl.


6. Cut Pork Loin into 2 or 3 roughly equal size pieces. Poke holes in the pork loin with a knife and work the seasoning paste into the holes.


7, Put Pork Loin in the oven beside your potatoes. Pork Loin will need to be in the oven 30 minutes total. Flip loins at the 10 and 20 minute mark. It's OK if the pork comes out of the oven before the potatoes, it will need to rest a few minutes to retain its juices.

8.Choose a vegetable, place in microwave safe bowl. Alternatively, buy a bag of frozen vegetables that can be microwaved right in their bag, even easier!

9.Wrap bowl in plastic wrap and place a small hole in plastic to allow it to vent.

10.Cook time will vary based on if the vegetables are fresh or frozen. Generally you will need between 2 to 7 minutes of cooking in the microwave. A quick internet search for the vegetable you are using should give you an idea of how long to steam it.

11.Once done in microwave, use an utensil to enlarge hole in plastic so as not to burn yourself with steam.

12. Enjoy!


A 2.5 pork loin yields about 14 servings of approximately 190 calories, 10g fat, 0g carbs, 23g protein.

With the suggested potatoes the recipe yields 4 servings of approximately 164 calories, 0g fat, 37g carbs, 4g protein.

Pork plus potatoes come to a total serving of:

354 calories, 10g fat, 37g carbs, 27g protein

The amount of potatoes can be increased or decreased depending on your family size, activity level, hunger, fitness goals, etc.
